Skyflakes Breaded Fish Fillet

Nothing really much to say for this humble crispy fried fish fillet, the cooking direction is very straightforward. It doesn’t involve any meticulous order, it’s a simple as getting the fish fillet ready for coating and seasoning then shallow pan frying it til crispy. You may add as much spices as you want, it all differs to one’s taste. I normally broil my fish but since it’s a skinless fish fillet with white meat, it tends to fall apart as it cooks. My kids would still eat it if I serve it though thinking how can I make it look more interesting for them to enjoy it without any complaints, crispy is the key.

Everyday and every meal I cook is mostly thinking of what my kids could eat with the whole family. I have a toddler and a big boy and I have the biggest desire to mKe my life a lot easier with the second child being able to eat what the three of us would. No special meal and extra prep, that would be the best. Considering the fact that I don’t shop as much to be on the safe side with social distancing, being creative with meal prep is essential. Perhaps my version of COVID-quarantine cooking.

Ingredients: Pacific Whiting Fish Fillets (or use your favorite fish), 1 snack packet of sky flakes crackers, salt, pepper, onion powder & garlic powder

I was able to stir my kid’s interest when he saw me pounding and grinding something in the mortar. How can a marble mortar and pestle not attract a curious kid’s attention? He was happy enough to know I was cooking fish for dinner and upon hearing what was being used for breading since we don’t have flour available, he gladly offered to work the mortar and pestle.

If you’re a Filipino then you know what Skyflakes is. Bingo! That’s my breading seasoned with salt, onion & garlic powder and black pepper. Very simple. Normally I would add a few drops of lemon juice on the fish but I didn’t bother doing it with this one. I was able to use a small pack of Skyflakes crackers to coat 3 fish fillets. I didn’t want it heavily breaded and was just after a good crisp for the fish. After mixing the and breaded the fish fillet, I simply pan fried it with very minimal oil. It turned out not greasy, lightly breaded, crispy on the outside and moist and tender inside. They loved it and dinner was not a pain at all.
